Ingredients

For the Dough:

4 cups all-purpose flour

1/4 cup granulated sugar

2 1/4 teaspoons (1 packet) instant yeast

1 teaspoon salt

1/2 cup whole milk, warmed

1/4 cup unsalted butter, melted

2 large eggs

For the Filling:

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

2 teaspoons ground cinnamon

1 cup fresh raspberries (or frozen, thawed and drained)

For the Lemon Glaze:

1 cup powdered sugar

2-3 tablespoons fresh lemon juice

Zest of 1 lemon

Instructions

Prepare the Dough: In a large mixing bowl, combine the flour, sugar, yeast, and salt. Add the warmed milk, melted butter, and eggs. Mix until a soft dough forms.

Knead the Dough: Turn the dough onto a floured surface and knead for about 5–7 minutes until smooth and elastic. Form it into a ball and place it in a greased bowl, covering with a damp cloth. Let it rise in a warm place for about 1 hour or until doubled in size.

Make the Filling: In a small bowl, mix together the softened butter, brown sugar, and ground cinnamon until well combined.

Roll Out the Dough: Once the dough has risen, punch it down and roll it out on a floured surface to a rectangle about 16x12 inches.

Spread the Filling: Evenly spread the cinnamon filling over the rolled-out dough. Then, sprinkle the raspberries on top.

Roll and Cut: Starting from the long side, roll the dough tightly into a log. Slice the log into 12 equal pieces.

Second Rise: Place the cinnamon rolls in a greased baking dish or on a lined baking sheet. Cover and let them rise again for about 30 minutes.

Preheat the Oven: Preheat your oven to 350°F (175°C).

Bake: Bake the rolls for 20-25 minutes or until golden brown and cooked through.

Prepare the Lemon Glaze: While the rolls are baking, whisk together the powdered sugar, lemon juice, and lemon zest until smooth. Adjust the consistency with more lemon juice if needed.

Glaze the Rolls: Once the cinnamon rolls are out of the oven, let them cool for a few minutes. Drizzle the lemon glaze over the warm rolls.

Serve: Enjoy the Raspberry Cinnamon Rolls warm or at room temperature, savoring the burst of raspberry and the zing of lemon glaze!
