2 pounds Yukon gold potatoes, peeled and diced

1 cup sour cream

1/2 cup mayonnaise

1 packet (1 oz) ranch dressing mix

1 cup celery, chopped

1 cup green onions, sliced

1/2 cup crispy bacon, crumbled

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Optional: 1/2 cup shredded cheddar cheese

Instructions
 

Cook the Potatoes: Place the diced Yukon gold potatoes in a large pot and cover with cold water. Add a pinch of salt, then bring to a boil. Cook until tender, about 10-15 minutes. Drain and allow to cool.

    Prepare the Dressing: In a large mixing bowl, whisk together sour cream, mayonnaise, and ranch dressing mix until smooth and well combined.

      Combine Ingredients: Once the potatoes are cool, add them to the bowl with the ranch dressing. Then add the chopped celery, green onions, crumbled bacon, and parsley. Stir gently to coat everything without breaking the potatoes.
