Ingredients

2 packs of instant ramen noodles (discard seasoning packets)

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch ginger, grated

1 red bell pepper, sliced

1 cup broccoli florets

1 cup snap peas

2 carrots, julienned

1/4 cup soy sauce

2 tablespoons honey or maple syrup

1 teaspoon chili paste (adjust for spice preference)

4 green onions, chopped

1 tablespoon sesame seeds

Salt and pepper to taste

Instructions

Cook the Ramen: Boil water in a pot and add the instant ramen noodles. Cook them according to package instructions, usually around 3-4 minutes. Drain and set aside.

Prepare the Sauce: In a small bowl, mix the soy sauce, honey (or maple syrup), and chili paste. Set aside.

Sauté Aromatics: In a large skillet or wok, heat the sesame oil over medium-high heat. Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.

Add Vegetables: Toss in the sliced red bell pepper, broccoli florets, snap peas, and julienned carrots. Stir-fry the vegetables for about 4-5 minutes, ensuring they are tender but still crisp.

Combine Noodles and Sauce: Add the cooked ramen noodles to the skillet. Pour the sauce over the mixture and use tongs to toss everything together, ensuring the noodles are evenly coated. Stir-fry for another 2-3 minutes.

Finish Off: Add chopped green onions, and sprinkle with sesame seeds. Season with salt and pepper to taste. Toss again to incorporate.

Serve Hot: Remove from heat and serve in bowls, garnished with some extra green onions or sesame seeds if desired.
