Ingredients
  

4 medium potatoes, peeled and cubed

1 cup shredded cheese (cheddar or your choice)

1/2 cup cooked bacon bits (optional)

1/4 cup green onions, finely chopped

1/4 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup breadcrumbs (for coating)

2 large eggs (beaten)

Vegetable oil (for frying)

Instructions
 

Cook the Potatoes: In a large pot, boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and allow to cool slightly.

    Mash the Potatoes: In a large mixing bowl, mash the potatoes until smooth.

      Mix the Filling: Add the shredded cheese, bacon bits (if using), green onions, sour cream, garlic powder, onion powder, salt, and pepper to the mashed potatoes. Mix until well combined.

        Form the Cakes: With your hands, take a portion of the potato mixture and shape it into a patty, about 1-inch thick. Repeat until all the mixture is used.

          Coat the Cakes: Dip each patty into the beaten eggs, then roll in breadcrumbs to coat evenly.

            Fry the Cakes: In a large skillet, heat vegetable oil over medium heat. Once hot, carefully place a few potato cakes in the skillet (don’t overcrowd) and fry until golden brown on one side, about 3-4 minutes. Flip and fry the other side until golden, another 3-4 minutes.

              Drain Excess Oil: Transfer the cakes to a paper towel-lined plate to drain excess oil.
