Ingredients

1 cup bell peppers (red, yellow, green), sliced

1 cup broccoli florets

1 cup snap peas

1 medium carrot, julienned

1 zucchini, sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon olive oil

1 teaspoon chili flakes (optional)

Sesame seeds for garnish

Instructions

Begin by washing and preparing all the vegetables. Slice the bell peppers, zucchini, and julienne the carrot.

In a large wok or skillet, heat the olive oil over medium-high heat. Ensure the oil is hot but not smoking.

Add the minced garlic and grated ginger to the hot oil, sautéing for about 30 seconds until fragrant.

Toss in the broccoli, snap peas, and carrot. Stir-fry for about 3-4 minutes until they start to soften but still retain a vibrant color.

Add the bell peppers and zucchini to the pan. Continue to stir-fry for another 3 minutes, ensuring all vegetables are evenly cooked.

Pour in the soy sauce and drizzle the sesame oil. If you like a bit of spice, sprinkle the chili flakes over the top. Toss all the ingredients together to coat evenly.

Cook for an additional 1-2 minutes, allowing the sauce to heat through and adhere to the vegetables.

Remove the stir fry from heat and garnish with sesame seeds before serving.
