500g mixed mushrooms (such as button, shiitake, and cremini), sliced

1 medium onion, finely chopped

3 cloves garlic, minced

3 cups vegetable broth

1 cup unsweetened almond milk (or any other dairy-free milk)

2 tablespoons olive oil

1 tablespoon nutritional yeast (optional, for a cheesy flavor)

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat.

    Add the chopped onion and sauté for about 3-4 minutes until translucent.

      Stir in the minced garlic and cook for an additional minute until fragrant.

        Add the sliced mushrooms to the pot. Cook for 6-7 minutes, stirring occasionally, until the mushrooms release their moisture and become tender.

          Sprinkle in the dried thyme, nutritional yeast (if using), salt, and pepper. Mix well to combine.

            Pour in the vegetable broth and allow the mixture to come to a simmer. Cook for another 10 minutes to let the flavors meld.

              Remove the pot from heat. Using an immersion blender, blend the soup until smooth and creamy. Alternatively, you can transfer the soup in batches to a countertop blender, blending it until smooth (be cautious with hot liquids!).

                Stir in the unsweetened almond milk and return the pot to low heat, warming through without boiling. Adjust seasoning if necessary.
