Ingredients
  

1 pre-made pie crust or homemade pie crust

6 large eggs

1 cup heavy cream

1 cup whole milk

1 cup grated Gruyère cheese (or Swiss cheese)

½ cup cooked bacon, crumbled

1 small onion, finely chopped

1 tablespoon olive oil

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon nutmeg (freshly grated, if possible)

Fresh chives, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C). If using a homemade crust, roll it out and fit it into a 9-inch pie dish. Prick the bottom with a fork and bake it for 10 minutes until lightly golden. Remove from the oven and set aside.

    In a skillet over medium heat, add the olive oil and sauté the finely chopped onion until translucent, about 5 minutes. Remove from heat and let cool slightly.

      In a mixing bowl, whisk together the eggs, heavy cream, whole milk, salt, pepper, and nutmeg until well combined.

        Evenly distribute the crumbled bacon and sautéed onions over the bottom of the pre-baked crust.

          Pour the egg mixture over the bacon and onions, allowing it to fill the crust. Sprinkle the grated Gruyère cheese on top.

            Bake in the preheated oven for 35-40 minutes or until the quiche is set in the middle and slightly golden on top.

              Once baked, remove from the oven and allow it to rest for 10 minutes before slicing.

                Serve warm or at room temperature, garnished with freshly chopped chives.
