2 cups shredded Monterey Jack cheese

1 cup shredded sharp cheddar cheese

1/2 cup diced chorizo (or plant-based chorizo)

1/4 cup diced onion

1/4 cup diced bell pepper (any color)

1 jalapeño, deseeded and diced (optional for extra heat)

2 tablespoons olive oil

1/4 teaspoon smoked paprika

1/4 teaspoon cumin

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Tortilla chips, for serving

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing for about 3 minutes until they soften.

    Stir in the diced chorizo and jalapeño (if using) and cook for an additional 4-5 minutes until the chorizo is browned and cooked through.

      Sprinkle in the smoked paprika, cumin, salt, and pepper, mixing well to combine.

        Reduce the heat to low and evenly distribute the Monterey Jack and cheddar cheeses over the chorizo mixture in the skillet.

          Cover the skillet with a lid and allow the cheese to melt for about 5-7 minutes, checking occasionally to ensure it doesn’t overheat and burn on the bottom.

            Once the cheese is gooey and melted to your liking, remove the skillet from the heat.
