Ingredients
  

2 cups white cheddar cheese, shredded

1 cup Monterey Jack cheese, shredded

1 cup whole milk (or half-and-half for a richer taste)

1 tablespoon unsalted butter

1 tablespoon olive oil

1 jalapeño, finely chopped (seeds removed for less heat)

1 small onion, finely chopped

2 cloves garlic, minced

1/2 teaspoon ground cumin

1/2 teaspoon paprika

Salt to taste

Fresh cilantro, chopped, for garnish

Tortilla chips, for serving

Instructions
 

In a medium saucepan over medium heat, combine the olive oil and butter. Allow the butter to melt completely.

    Add the chopped onion and sauté for about 3-4 minutes until softened and translucent.

      Stir in the minced garlic and chopped jalapeño, and continue cooking for an additional 1-2 minutes until fragrant.

        Reduce the heat to low and pour in the whole milk (or half-and-half), stirring continuously to prevent curdling.

          Gradually add the shredded white cheddar and Monterey Jack cheese, one handful at a time, stirring gently to help it melt smoothly into the sauce.

            Sprinkle in the ground cumin, paprika, and salt. Stir well to combine, ensuring the mixture is creamy and well-blended.

              If the queso is too thick, add a little extra milk until you reach your desired consistency.

                Once fully melted and creamy, remove from heat and let it rest for a minute.

                  Garnish with fresh cilantro before serving.
