Ingredients

6 large tortillas (flour or corn)

2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)

1 cup cooked and shredded chicken (or black beans for a vegetarian option)

1/2 cup bell peppers, diced

1/2 cup red onion, diced

1/4 cup fresh cilantro, chopped

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

Salt and pepper to taste

Olive oil spray

Dipping sauces (sour cream, salsa, or guacamole) for serving

Instructions

Preheat Oven/Air Fryer: If using the oven, preheat to 375°F (190°C). If using an air fryer, set it to 350°F (175°C).

Prepare Cone Molds: Take either a muffin tin or cone-shaped molds to shape your quesadilla cones. If using a muffin tin, ensure it is greased lightly to avoid sticking.

Prepare Filling: In a large bowl, combine the shredded chicken (or beans), shredded cheese, diced bell peppers, red onion, cilantro, chili powder, cumin, garlic powder, salt, and pepper. Mix everything until well combined.

Shape Tortillas: To make the tortillas pliable, microwave them for about 10-15 seconds. Gently form each tortilla into a cone shape by folding it around your cone molds. Secure the edges with toothpicks if necessary.

Fill the Cones: Carefully fill each tortilla cone with a generous amount of the cheese and chicken filling, pressing down gently to pack it in.

Spray with Oil: Lightly spray the outside of each cone with olive oil to help them crisp up during baking/frying.

              Bake/Air Fry:

                - For Oven: Place the quesadilla cones in the preheated oven and bake for about 15-20 minutes or until the tortillas are crispy and the cheese is melted.

                  - For Air Fryer: Place the cones in the air fryer basket (do not overcrowd) and cook for about 10-12 minutes, checking halfway through for doneness.

Serve: Once golden brown and crispy, carefully remove the cones from their molds. Serve them hot with your choice of dipping sauces like sour cream, salsa, or guacamole.
