Ingredients

2 cups all-purpose flour

1 cup rolled oats

1/2 cup brown sugar

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 cup unsalted butter, melted

1 cup pumpkin puree

1/2 cup sweetened condensed milk

1 teaspoon vanilla extract

1 large egg

1/2 cup chopped pecans (optional)

Powdered sugar for dusting (optional)

Instructions

Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish or line it with parchment paper for easy removal.

Prepare the crust and crumble mixture: In a large bowl, combine the flour, oats, brown sugar, granulated sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. Mix well.

Add the melted butter to the dry ingredients and stir until a crumbly dough forms. Reserve 1 cup of this mixture for topping.

Press the remaining crumble mixture firmly into the bottom of the prepared baking dish to form the crust. Bake in the preheated oven for about 15 minutes, until lightly golden and set.

Make the pumpkin filling: In a medium bowl, whisk together the pumpkin puree, sweetened condensed milk, vanilla extract, and egg until smooth and well combined.

Pour the pumpkin mixture over the baked crust, using a spatula to spread it evenly.

Sprinkle the reserved crumble mixture over the pumpkin filling evenly, and add the chopped pecans if using.

Bake in the oven for an additional 25-30 minutes, or until the topping is golden brown and the filling is set.

Cool completely in the baking dish on a wire rack before slicing into bars.

Dust with powdered sugar just before serving, if desired.
