Pumpkin Cookies with Brown Butter Frosting

1 cup pumpkin puree (fresh or canned)

1/2 cup unsalted butter, softened

1 cup brown sugar

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon nutmeg

1/4 teaspoon salt

Brown Butter Frosting Ingredients:

1/2 cup unsalted butter

2 cups powdered sugar

2 tablespoons milk

1 teaspoon vanilla extract

Instructions
 

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

      Add the pumpkin puree, egg, and vanilla extract to the butter mixture. Beat until combined.

        In another bowl, whisk together the flour, baking soda, spices, and salt.

          Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.

            Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.

              Bake for 10-12 minutes or until the edges are golden. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

                For the Brown Butter Frosting: In a saucepan, melt the butter over medium heat. Continue to cook until the butter turns a golden brown and has a nutty aroma, about 5-7 minutes. Be careful not to burn it.

                  Transfer the browned butter to a mixing bowl and cool slightly. Add the powdered sugar, milk, and vanilla extract, and beat until smooth and creamy.

                    Once the cookies are completely cool, spread a generous amount of brown butter frosting on each cookie.
