Ingredients

2 cups pulled pork (cooked and shredded)

1 cup barbecue sauce

2 medium carrots, diced

1 cup frozen peas

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup beef or vegetable broth

2 tablespoons Worcestershire sauce

4 cups mashed potatoes (prepared with butter and milk)

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 400°F (200°C).

In a large skillet over medium heat, sauté the chopped onion and minced garlic until the onion is translucent, about 3-4 minutes.

Add the diced carrots to the skillet and cook for another 5 minutes, until they begin to soften.

Stir in the pulled pork, barbecue sauce, smoked paprika, Worcestershire sauce, and beef broth. Mix well and simmer for about 10 minutes, allowing the flavors to meld. Add the frozen peas and season with salt and pepper to taste. Remove from heat.

In a large baking dish, spread the pulled pork mixture evenly across the bottom.

Top the pulled pork with an even layer of mashed potatoes, smoothing it out with a spatula. You can create decorative swirls or peaks in the mashed potatoes for added texture.

Place the dish in the preheated oven and bake for about 25-30 minutes, or until the mashed potatoes are slightly golden and the filling is bubbling.

Once done, remove from the oven and let it cool for a few minutes before serving.
