2 cups cooked pulled pork (preferably smoked)

4 large flour tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 medium red onion, thinly sliced

1 cup fresh spinach leaves

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon chili powder

Salt and pepper to taste

Salsa and sour cream for serving (optional)

Fresh cilantro for garnish (optional)

Instructions
 

In a bowl, combine the pulled pork, smoked paprika, garlic powder, chili powder, salt, and pepper. Mix well to evenly coat the pork with the spices.

    Heat olive oil in a large skillet over medium heat. Add the sliced red onion and sauté until softened and slightly caramelized, about 5 minutes. Set aside.

      Place one tortilla in the skillet over medium heat. Sprinkle a layer of cheddar and mozzarella cheese over half of the tortilla.

        Add a generous portion of the seasoned pulled pork on top of the cheese. Follow with the sautéed onions and a handful of fresh spinach.

          Fold the tortilla in half, covering the filling. Cook for about 3-4 minutes on each side, until the tortilla is golden brown and the cheese is melted.

            Remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and repeat the process with the remaining tortillas and filling.

              Serve the quesadillas warm with salsa, sour cream, and garnished with fresh cilantro if desired.
