Ingredients

1 lb pulled pork (cooked, shredded)

1 bag tortilla chips

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 can (15 oz) black beans, drained and rinsed

1 cup pico de gallo

1 jalapeño, sliced (optional for heat)

1 avocado, diced

1/2 cup sour cream

1/4 cup fresh cilantro, chopped

1 tablespoon olive oil

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Instructions

Preheat your oven to 400°F (200°C).

In a mixing bowl, toss the pulled pork with olive oil, cumin, smoked paprika, salt, and pepper to ensure the meat is evenly coated.

On a large baking sheet, spread out the tortilla chips in an even layer.

Layer the pulled pork across the chips, ensuring even distribution.

Sprinkle the black beans over the pulled pork, followed by a generous topping of shredded cheddar and Monterey Jack cheeses.

Bake in the preheated oven for 10-15 minutes or until the cheese is melted and bubbly.

Remove the nachos from the oven, and top with pico de gallo, sliced jalapeños, and diced avocado.

Drizzle sour cream over the top and garnish with fresh cilantro.

Serve immediately while the nachos are warm and cheesy!
