Ingredients
  

1 package of small cocktail sausages (about 12-15 sausages)

1 cup warm water (about 110°F/43°C)

2 tablespoons granulated sugar

1 packet active dry yeast (2 ¼ teaspoons)

2 ½ cups all-purpose flour

1 teaspoon salt

½ cup baking soda

1 egg, beaten (for egg wash)

Coarse sea salt, for sprinkling

Optional: Mustard or cheese sauce for dipping

Instructions
 

In a mixing bowl, combine warm water, granulated sugar, and yeast. Stir gently and let it sit for about 5 minutes until frothy.

    In a separate large bowl, mix the all-purpose flour and salt. Make a well in the center and pour in the yeast mixture. Stir until a dough begins to form.

      Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place it in a lightly greased bowl, cover with a damp towel, and let it rise in a warm spot for about 1 hour, or until doubled in size.

        Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

          In a large pot, bring 10 cups of water to a boil, then add the baking soda.

            Once the dough has risen, punch it down and roll it out into a rectangle about ½ inch thick. Cut the dough into strips about 1 inch wide.

              Take each cocktail sausage and wrap a strip of dough around it, ensuring it’s completely covered. Place the wrapped sausage on the parchment-lined baking sheet.

                Once all sausages are wrapped, gently drop each into the boiling baking soda water for about 30 seconds, then transfer back to the baking sheet. This creates the pretzel crust.

                  Brush the tops with the beaten egg and sprinkle with coarse sea salt.

                    Bake in the preheated oven for 12-15 minutes or until golden brown.

                      Allow to cool slightly before serving with mustard or cheese sauce for dipping.
