For the Pretzel Bites:

1 ¼ cups warm water (110°F to 115°F)

2 teaspoons active dry yeast

1 tablespoon granulated sugar

3 ½ cups all-purpose flour

½ cup baking soda

1 teaspoon kosher salt

1 egg, beaten (for egg wash)

Coarse sea salt (for sprinkling)

For the Cheddar Sauce:

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 cup milk (whole or 2%)

1 ½ cups shredded sharp cheddar cheese

1 teaspoon Dijon mustard

½ teaspoon garlic powder

Salt and pepper to taste

Instructions
 

Prepare the Dough:

    - In a large mixing bowl, combine the warm water, active dry yeast, and granulated sugar. Let it sit for about 5 minutes until foamy.

      - Add the flour and kosher salt to the yeast mixture, and mix until a soft dough forms.

        - Knead the dough on a floured surface for about 5 minutes until smooth. Place the dough in a lightly greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until it has doubled in size.

          Shape Pretzel Bites:

            - Preheat your oven to 450°F (230°C) and line two baking sheets with parchment paper.

              - Once the dough has risen, punch it down and turn it onto a floured surface. Roll it into a long rope (about 1 inch thick) and cut it into 1-inch pieces.

                - In a large pot, bring about 10 cups of water to a boil and add the baking soda.

                  Boil the Pretzel Bites:

                    - Carefully drop the pretzel pieces into the boiling water, about 5-6 at a time. Boil for 30 seconds, then use a slotted spoon to remove them and place them on the prepared baking sheets.

                      - Brush the tops of the bites with the beaten egg and sprinkle them with coarse sea salt.

                        Bake the Pretzel Bites:

                          - Bake in the preheated oven for 12-15 minutes or until they are golden brown. Let them cool slightly on a wire rack.

                            Make the Cheddar Sauce:

                              - In a saucepan over medium heat, melt the butter. Stir in the flour and cook for about 2 minutes until lightly golden, stirring constantly.

                                - Gradually whisk in the milk, ensuring there are no lumps. Continue cooking and whisking until the mixture thickens, about 3-5 minutes.

                                  - Remove from heat and stir in the shredded cheddar cheese, Dijon mustard, garlic powder, salt, and pepper. Mix until smooth and the cheese is fully melted.

                                    Serve:
