4 large russet potatoes

1 cup sour cream

1 cup shredded sharp cheddar cheese

1/2 cup cooked and crumbled bacon (or turkey bacon)

1/4 cup green onions, finely chopped

1/4 cup unsalted butter, melted

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Additional cheese for topping

Instructions
 

Preheat your oven to 400°F (200°C).

    Scrub the russet potatoes under cold water, then pat them dry. Prick each potato several times with a fork to allow steam to escape while baking.

      Place the potatoes directly on the oven rack and bake for 45-60 minutes, until they are tender when pierced with a fork.

        Let the baked potatoes cool for about 10 minutes, then cut them in half lengthwise. Carefully scoop out the insides into a mixing bowl, leaving a small border of potato in the skin.

          To the bowl with the scooped-out potato, add sour cream, melted butter, half of the cheddar cheese, crumbled bacon, green onions, garlic powder, onion powder, and salt and pepper to taste. Mix until the ingredients are well combined and creamy.

            Spoon the potato mixture back into the potato skins, packing it in tightly.

              Top each filled potato with the remaining cheddar cheese and a sprinkle of extra bacon, if desired.

                Place the stuffed potatoes on a baking sheet and return them to the oven. Bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

                  Once done, remove the potatoes from the oven and let them cool slightly before serving.
