Ingredients
  

1 sheet of puff pastry (thawed)

2 cups fresh spinach (roughly chopped)

1 cup feta cheese (crumbled)

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

2 cloves garlic (minced)

1 egg (beaten)

1 tablespoon olive oil

Salt and pepper to taste

Sesame seeds for topping (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant.

      Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

        In a mixing bowl, combine the cooled spinach, feta, ricotta, Parmesan, and season with salt and pepper. Mix until well combined.

          Roll out the puff pastry on a lightly floured surface and cut it into squares (about 4x4 inches).

            Place a generous spoonful of the spinach and cheese mixture in the center of each pastry square.

              Fold the pastry over to create a triangle shape and seal the edges by pressing with a fork.

                Brush the tops of the pastries with the beaten egg and sprinkle with sesame seeds if desired.

                  Arrange the stuffed pastries on a baking sheet lined with parchment paper.

                    Bake in the preheated oven for 20-25 minutes, or until golden and puffed up.

                      Remove from oven and let cool slightly before serving.
