4 large russet potatoes, peeled and diced

1 large onion, chopped

4 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

2 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional 2 minutes, until fragrant. Be careful not to let it burn.

      Add the diced potatoes to the pot and stir well, cooking for about 3-4 minutes.

        Pour in the vegetable broth, making sure the potatoes are fully covered. Bring to a boil, then reduce heat to a simmer. Cover and let it cook for about 20-25 minutes, or until the potatoes are tender.

          Once the potatoes are cooked, use an immersion blender to puree the soup until smooth. If you prefer a chunkier consistency, you can blend only half of the soup.

            Stir in the heavy cream, dried thyme, smoked paprika, salt, and pepper. Adjust seasoning to taste and heat through for another 5 minutes on low.

              Remove from heat. Serve hot, garnished with chopped green onions and parsley.
