4 medium-sized russet potatoes, cut into bite-sized cubes

1 tablespoon olive oil

3 garlic cloves, minced

1 teaspoon dried rosemary

1 teaspoon dried thyme

2 teaspoons onion powder

Salt and pepper to taste

1 cup shredded cheddar cheese (optional)

Fresh parsley, chopped for garnish (optional)

Prepare the Potatoes: In a large bowl, combine the cubed potatoes with olive oil, minced garlic, dried rosemary, dried thyme, onion powder, salt, and pepper. Toss until the potatoes are evenly coated.

    Assemble the Foil Packets: Cut a large piece of aluminum foil (about 12 inches). Place a generous portion of the potato mixture in the center and fold the foil over the potatoes, sealing the edges to create a packet. Ensure that it is tightly sealed to prevent steam from escaping.

      Grill or Bake: Preheat your grill to medium-high heat (about 400°F) or your oven to 425°F. Place the foil packets directly on the grill or a baking sheet in the oven. Cook for about 25-30 minutes, shaking the packets halfway through to ensure even cooking.
