Potato and Sausage Chowder

6 medium potatoes, peeled and diced

1 lb (450g) sausage (Italian or your choice), sliced

1 medium onion, chopped

2 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

2 cups corn (fresh or frozen)

2 tsp dried thyme

1 tsp paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat olive oil over medium heat. Add the sliced sausage and cook until browned (about 5-7 minutes). Remove the sausage from the pot and set aside, leaving the drippings.

    In the same pot, add chopped onions and garlic. Sauté for 3-4 minutes, until the onions are soft and translucent.

      Stir in the diced potatoes, chicken broth, thyme, paprika, and season with salt and pepper. Bring to a boil, then reduce the heat to a simmer. Cover and cook until the potatoes are tender, about 15-20 minutes.

        Once the potatoes are cooked, use a potato masher to gently mash a portion of the potatoes in the pot to thicken the chowder, leaving some pieces intact for texture.

          Pour in the heavy cream and add the corn to the pot. Stir in the cooked sausage, and let the chowder simmer for another 5 minutes until heated through. Adjust seasoning with salt and pepper if necessary.

            Serve immediately, garnished with chopped parsley for a fresh finish.
