4 large Portobello mushrooms

1 cup all-purpose flour

2 large eggs

2 cups breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

Cooking spray or olive oil for drizzling

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking.

    Clean the Portobello mushrooms by wiping them with a damp cloth. Remove the stems and slice the caps into strips, resembling fries.

      Set up a breading station: In one shallow dish, place the flour. In another dish, whisk the eggs until frothy. In a third dish, combine the breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and black pepper.

        Coat each mushroom strip in flour, shaking off any excess.

          Dip the floured mushroom into the egg, allowing any excess to drip off.

            Roll the mushroom in the breadcrumb mixture, ensuring it's evenly coated. Repeat for all strips.

              Arrange the coated mushroom fries on the prepared baking sheet in a single layer. Lightly spray with cooking spray or drizzle with olive oil for added crispness.

                Bake in the preheated oven for 20-25 minutes, flipping halfway through, until they are golden brown and crispy on both sides.

                  Once cooked, remove from the oven and let cool slightly before transferring to a serving platter.

                    Garnish with fresh chopped parsley for a pop of color. Serve immediately while hot.
