Pork Tenderloin with Mustard Sauce

1.5 pounds pork tenderloin

2 tablespoons olive oil

Salt and black pepper, to taste

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

4 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

3 tablespoons Dijon mustard

2 tablespoons whole grain mustard

1 tablespoon honey

1 tablespoon apple cider vinegar

Fresh parsley, chopped, for garnish

Prepare the Pork: Preheat your oven to 400°F (200°C). Season the pork tenderloin generously with salt, black pepper, and thyme on all sides.

    Sear the Pork: Heat the olive oil in a large, oven-safe skillet over medium-high heat. Add the pork tenderloin and sear it for about 3-4 minutes on each side until it forms a golden-brown crust. Remove the pork from the skillet and set aside.

      Make the Garlic Base: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it.

        Create the Sauce: Pour in the chicken broth, using a wooden spoon to scrape any browned bits from the bottom of the skillet. Stir in the heavy cream, both Dijon and whole grain mustard, honey, and apple cider vinegar. Mix until well combined and simmer for a minute.

          Cook the Pork in the Oven: Return the pork tenderloin to the skillet, spoon some sauce over it, and transfer the skillet to the preheated oven. Roast for about 15-20 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

            Rest and Slice: Remove the skillet from the oven and let the pork rest for about 5-10 minutes before slicing. This helps to keep it juicy.

              Serve: Spoon the creamy mustard sauce over the sliced pork tenderloin. Garnish with fresh parsley and serve with your favorite sides.
