1 lb pork tenderloin

Salt and pepper, to taste

2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

2 tablespoons Dijon mustard

1 tablespoon whole grain mustard

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon white wine vinegar

Fresh parsley, chopped (for garnish)

Prepare the Pork: Start by patting the pork tenderloin dry with paper towels. Season generously with salt and pepper on all sides.

    Sear the Tenderloin: In a large skillet, heat the olive oil over medium-high heat. Add the tenderloin and sear for about 3-4 minutes on each side, or until it's nicely browned all over. Remove the tenderloin from the skillet and set aside on a plate.
