4 bone-in pork chops (1 inch thick)

Salt and black pepper, to taste

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 ounces cremini mushrooms, sliced

1 cup beef broth

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Pork Chops: Season both sides of the pork chops generously with salt and black pepper.

    Brown the Pork Chops: In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes per side until golden brown. Remove from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender and browned, approximately 5-6 minutes.

        Create the Gravy Base: Pour in the beef broth, Worcestershire sauce, soy sauce, dried thyme, and rosemary. Stir well to combine and scrape up any browned bits from the bottom of the skillet.

          Return Pork Chops to Skillet: Place the seared pork chops back into the skillet, spooning some of the mushroom mixture over the top. Reduce the heat to low, cover, and let simmer for about 10-15 minutes until the pork chops are cooked through (internal temperature should reach 145°F/63°C).

            Thicken the Gravy: Remove the pork chops to a plate and cover to keep warm. Stir the cornstarch mixture into the gravy and cook for an additional 2-3 minutes until thickened.

              Serve: Plate the pork chops and ladle the mushroom gravy over the top. Garnish with fresh chopped parsley for added flavor and color.
