4 bone-in pork chops (about 1 inch thick)

Salt and pepper, to taste

2 tablespoons olive oil

4 slices of thick-cut bacon, chopped

1 medium onion, thinly sliced

2 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 teaspoon Dijon mustard

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 tablespoon fresh parsley, chopped (for garnish)

Prepare the Pork Chops: Season the pork chops generously with salt and pepper on both sides. Allow them to rest at room temperature while you prepare the other ingredients.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate to drain. Leave about 2 tablespoons of bacon fat in the skillet.

      Sear the Pork Chops: Increase the heat to medium-high and add olive oil to the skillet. Once hot, add the pork chops. Sear until golden brown and cooked through, about 4-5 minutes per side. The internal temperature should reach 145°F (63°C). Remove the chops from the skillet and let them rest on a plate, loosely covered with foil.
