2 lbs beef chuck roast

3 tablespoons olive oil

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)

2 tablespoons fresh thyme, chopped (or 1 tablespoon dried)

1 tablespoon onion powder

1 tablespoon garlic powder

2 teaspoons salt

1 teaspoon black pepper

2 cups beef broth

2 cups mixed vegetables (carrots, potatoes, and onions)

Instructions
 

Preheat your oven to 350°F (175°C).

    Pat the beef chuck roast dry with paper towels, then rub it generously with olive oil to help the seasonings stick.

      In a small bowl, mix together minced garlic, rosemary, thyme, onion powder, garlic powder, salt, and black pepper to create a seasoning mix.

        Coat the entire roast with the seasoning mix, making sure to get it into any crevices.

          In a large oven-safe skillet or Dutch oven, heat the skillet over medium-high heat. Sear the roast on all sides until browned (about 3-4 minutes per side).

            Remove the roast temporarily from the skillet and add the beef broth to deglaze the pan, scraping up any browned bits from the bottom.

              Return the roast to the skillet and surround it with the mixed vegetables.

                Cover the skillet with a lid or aluminum foil, then transfer it to the preheated oven.

                  Roast for approximately 2 to 2.5 hours, or until the internal temperature of the roast reaches 145°F (medium-rare) or 160°F (medium). Baste the roast occasionally with the cooking juices.

                    Once cooked to your desired doneness, remove the roast from the oven and let it rest for 10-15 minutes before slicing.
