Ingredients

1 lb ground beef or turkey

1 cup onion, chopped

2 cloves garlic, minced

1 can (15 oz) mixed vegetables (drained) or 2 cups frozen mixed veggies

1 can (10.5 oz) condensed cream of mushroom soup

1 cup beef broth

2 cups cooked rice (white or brown)

1 teaspoon Worcestershire sauce

1 teaspoon Italian seasoning

1/2 teaspoon black pepper

1 cup shredded cheddar cheese

Optional: 1/2 cup breadcrumbs for topping

Instructions

Preheat your oven to 350°F (175°C).

In a large skillet over medium heat, add the ground beef (or turkey) and cook until browned. Drain excess fat if necessary.

Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.

Stir in the mixed vegetables, cream of mushroom soup, beef broth, Worcestershire sauce, Italian seasoning, and black pepper. Mix well until combined.

Fold in the cooked rice until everything is evenly distributed within the mixture.

Transfer the mixture to a greased 9x13 inch casserole dish.

Evenly spread the shredded cheddar cheese over the top. If desired, sprinkle breadcrumbs for an extra crunchy topping.

Cover the dish with aluminum foil and bake in the preheated oven for 25-30 minutes. Remove the foil and bake an additional 10 minutes or until the cheese is bubbly and golden brown.

Remove from the oven and let it sit for about 5 minutes before serving.
