Polish Potato Soup Recipe

4 medium potatoes, peeled and diced

1 large onion, finely chopped

2 cloves garlic, minced

2 carrots, diced

1 stalk celery, diced

4 cups vegetable broth

1 cup heavy cream (or coconut milk for a dairy-free option)

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh dill, for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add the minced garlic and cook for another minute, stirring frequently to avoid burning.

      Stir in the diced carrots and celery, cooking for an additional 3-4 minutes until slightly softened.

        Add the diced potatoes to the pot, followed by the vegetable broth. Bring the mixture to a boil.

          Once boiling, reduce the heat and let it simmer for about 15-20 minutes, until the potatoes are tender.

            Once the potatoes are soft, use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half the soup and keep the rest as is.

              Stir in the heavy cream (or coconut milk) and dried thyme. Season with salt and pepper to taste. Let the soup simmer for an additional 5 minutes to combine the flavors.

                Serve hot, garnished with fresh dill for an extra touch of flavor and color.
