1 box yellow cake mix

1/2 cup unsalted butter, melted

1 cup brown sugar, packed

1 can (20 oz) pineapple slices in juice, drained (reserve the juice)

Maraschino cherries (about 10 for garnish)

3 large eggs

1/2 cup pineapple juice (from the reserved juice)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish or a round cake pan with non-stick spray.

    In a medium bowl, combine the melted butter and brown sugar until well blended. Pour this mixture into the bottom of your prepared baking dish. Spread it evenly across the bottom.

      Arrange the drained pineapple slices over the butter and sugar mixture. Place a maraschino cherry in the center of each pineapple slice.

        In a large bowl, prepare the yellow cake mix according to the package instructions. Instead of using water, substitute with the reserved pineapple juice, and add the eggs, vanilla extract, and ground cinnamon to the mix.

          Stir until all ingredients are combined and smooth. Gently pour the cake batter over the pineapple and cherries in the baking dish.

            Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.

              Once baked, remove the cake from the oven and let it cool for about 10 minutes.

                Carefully invert the cake onto a serving platter. (Tip: Place the platter over the baking dish and flip it upside down gently.)

                  Allow the cake to cool completely before cutting into slices.
