1 can (20 oz) pineapple slices in juice, drained (reserve juice)

1/2 cup unsalted butter, melted

1 cup brown sugar

1/2 teaspoon ground cinnamon

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup granulated sugar

1 large egg

1/4 cup pineapple juice (reserved from the can)

1/2 teaspoon vanilla extract

Instructions
 

Preheat your oven to 350°F (175°C).

    In a 9-inch round cake pan, pour the melted butter evenly across the bottom. Sprinkle the brown sugar and cinnamon over the butter, creating a nice caramel layer.

      Arrange the pineapple slices in a single layer over the brown sugar mixture, placing a cherry in the center of each pineapple ring if desired. Set aside.

        In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

          In another bowl, cream together the granulated sugar and egg until light and fluffy.

            Stir in the reserved pineapple juice and vanilla extract into the sugar and egg mixture.

              Gradually add the flour mixture to the wet ingredients, mixing until just combined and smooth.

                Carefully pour the batter over the arranged pineapple slices in the cake pan.

                  Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean. The edges should be lightly golden.

                    Once baked, let the cake cool in the pan for about 10 minutes. Then, carefully invert the cake onto a serving plate while it’s still warm, allowing the pineapple topping to show.

                      Let the cake cool slightly before slicing and serving.
