1 ½ cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

½ cup full-fat sour cream

½ cup crushed pineapple, drained

½ cup shredded coconut (unsweetened or sweetened, as preferred)

1 cup diced fresh pineapple (for decoration)

½ cup whipped cream (optional, for serving)

Fresh mint leaves (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar using a hand mixer or stand mixer until light and fluffy, about 3-4 minutes.

        Add Eggs and Vanilla: Beat in the eggs one at a time, then mix in the vanilla extract until well combined.

          Incorporate Sour Cream: Gradually add the sour cream and mix until smooth.

            Combine Dry Ingredients: Slowly add the dry ingredient mixture to the wet ingredients, mixing until just combined. Be careful not to over-mix.

              Fold in Pineapple and Coconut: Gently fold in the crushed pineapple and shredded coconut until evenly distributed throughout the batter.

                Bake the Cake: Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
