Philly Cheesesteak Stew

1 pound beef sirloin, thinly sliced

2 tablespoons Olive oil

1 medium onion, diced

1 red bell pepper, sliced

1 green bell pepper, sliced

3 cloves garlic, minced

4 cups beef broth

2 cups potatoes, diced

1 tablespoon Worcestershire sauce

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup provolone cheese, shredded

1 cup sliced mushrooms (optional)

Instructions
 

Heat olive oil in a large pot or Dutch oven over medium heat.

    Add the sliced beef sirloin to the pot, seasoning with salt and pepper. Sear the beef for about 5 minutes until browned. Remove it from the pot and set aside.

      In the same pot, add the diced onion, sliced red and green peppers, and mushrooms (if using). Sauté for about 5-7 minutes until the vegetables are softened.

        Stir in the minced garlic and cook for an additional minute until fragrant.

          Add the diced potatoes, beef broth, Worcestershire sauce, oregano, and smoked paprika to the pot. Bring the mixture to a boil.

            Once boiling, reduce the heat to low and return the browned beef to the pot. Cover and simmer for about 30 minutes until the potatoes are tender.

              Remove the pot from heat and stir in the shredded provolone cheese until melted and well incorporated.

                Taste and adjust seasoning with extra salt or pepper as needed.
