Philly Cheesesteak Sliders

1 lb thinly sliced ribeye steak

1 tablespoon olive oil

1 small onion, thinly sliced

1 small green bell pepper, thinly sliced

1 cup provolone cheese, shredded

1 cup cheddar cheese, shredded

12 slider buns

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Steak: In a large skillet over medium-high heat, heat the olive oil. Add the sliced ribeye steak, seasoning it with salt and pepper. Cook for about 3-5 minutes, stirring frequently until browned and just cooked through. Remove from skillet and set aside.

    Sauté Vegetables: In the same skillet, add the sliced onions and bell peppers. Sauté for 5-7 minutes until they’re soft and caramelized. Return the cooked steak to the skillet and mix everything together.

      Cheese Melting: Lower the heat and sprinkle both the provolone and cheddar cheese over the steak and veggie mixture. Cover the skillet with a lid for 2-3 minutes until the cheese melts beautifully.

        Prep the Buns: While the cheese is melting, cut the slider buns in half horizontally (do not separate them into individual buns). Spread the mayonnaise and Dijon mustard evenly on the cut sides of the buns.

          Assemble the Sliders: Preheat your oven to 350°F (175°C). In a baking dish, place the bottom halves of the slider buns. Spoon the cheesy steak mixture generously over the bottoms and then place the top halves of the buns on each.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 10-12 minutes. If you want a crispier top, remove the foil for the last 3-5 minutes of baking.

              Serve: Once done, remove from the oven and let cool for a couple of minutes. Garnish with freshly chopped parsley, slice them apart, and serve warm.
