Ingredients
  

1 pound thinly sliced ribeye steak

1 tablespoon olive oil

1 medium onion, thinly sliced

1 medium green bell pepper, thinly sliced

4 slices provolone cheese

4 hoagie rolls or sandwich bun

2 tablespoons mayonnaise

1 teaspoon Worcestershire sauce

Salt and pepper to taste

Optional: sliced jalapeños for heat

Prepare the Steak: Heat the olive oil in a skillet over medium-high heat. Season the ribeye steak with salt and pepper. Add it to the hot skillet and cook for about 2-3 minutes until browned. Remove and set aside.

    Sauté Vegetables: In the same skillet, add the sliced onion and green bell pepper. Sauté for 5-7 minutes until the vegetables are softened and slightly caramelized. Add Worcestershire sauce to enhance the flavor.

      Combine Ingredients: Return the steak to the skillet with the sautéed onions and peppers. Stir well to combine and cook for another minute to meld the flavors.

        Melt the Cheese: Divide the steak and vegetable mixture into four portions in the skillet. Place a slice of provolone cheese over each portion and cover the skillet to allow it to melt for about 1-2 minutes.

          Prepare the Rolls: While the cheese is melting, slice the hoagie rolls in half lengthwise. Spread mayonnaise on the inside of each roll for added creaminess.

            Assemble the Melt: Once the cheese has melted, use a spatula to carefully place each portion of the steak and cheese mixture inside the hoagie rolls. Top with optional sliced jalapeños if desired.

              Toast the Sandwiches: Place the assembled melts back in the skillet (or a grill pan) and toast for about 2 minutes on each side until the bread is golden brown and crispy.

                Serve: Remove from the heat, slice in half if desired, and serve immediately with your favorite sides like fries or salad.
