4 large russet potatoes (for fries)

1 lb ribeye steak, thinly sliced

1 medium onion, sliced

1 green bell pepper, sliced

2 cups shredded provolone cheese

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon garlic powder

Fresh parsley, chopped (for garnish)

Prepare the Fries: Preheat your oven to 425°F (220°C). Wash and cut the russet potatoes into thin fries. Soak them in cold water for 30 minutes to remove excess starch, then drain and pat them dry.

    Bake the Fries: Toss the dried fries in a large bowl with 1 tablespoon of olive oil, garlic powder, salt, and pepper. Spread them in a single layer on a baking sheet. Bake in the preheated oven for 25-30 minutes, flipping halfway through until golden and crispy.

      Cook the Steak: While the fries are baking, heat the remaining tablespoon of olive oil in a skillet over medium-high heat. Add the sliced onion and green bell pepper, sautéing until softened, about 5-7 minutes.

        Add Steak: Push the vegetables to the side and add the ribeye steak to the skillet. Season with salt and pepper. Cook until the steak is browned and cooked through, about 3-5 minutes. Mix the vegetables in with the steak at the end.

          Assemble: Once the fries are done, remove them from the oven and layer the steak and vegetable mixture evenly over the fries. Sprinkle the shredded provolone cheese generously on top.

            Melt the Cheese: Return the loaded fries to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

              Garnish and Serve: Remove from the oven, garnish with finely chopped fresh parsley, and serve immediately.
