1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

⅓ cup unsalted butter, melted

24 oz (3 packs) Philadelphia cream cheese, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 cup sour cream

½ cup fruit topping of choice (such as blueberry, strawberry, or raspberry)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C) and line a 9x13-inch baking pan with parchment paper, leaving some overhang for easy lifting later.

    Make the Crust: In a medium bowl, combine the graham cracker crumbs, ⅓ cup sugar, and melted butter. Mix until the crumbs are evenly coated. Press the mixture securely into the bottom of the prepared pan to form an even layer. Bake for 10 minutes, then remove from the oven and let cool.

      Prepare the Cream Cheese Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2 minutes. Gradually add 1 cup sugar, beating until well combined.

        Add Eggs and Flavors: Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract, lemon juice, and sour cream until the mixture is completely smooth. Scrape down the sides of the bowl as needed.

          Combine and Pour: Pour the cheesecake mixture over the cooled graham cracker crust, spreading it evenly to the edges.

            Bake: Bake the cheesecake in the preheated oven for about 40-45 minutes, or until the edges are set and the center is slightly jiggly.

              Cool: Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for about an hour. Then, transfer it to the fridge and chill for at least 4 hours (or overnight for best results).
