Pesto Slow Cooker Chicken Pasta

2 boneless, skinless chicken breasts

1 cup basil pesto (store-bought or homemade)

1 can (14.5 oz) diced tomatoes, undrained

1 cup chicken broth

8 oz penne pasta

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Place the chicken breasts at the bottom of the slow cooker.

    In a mixing bowl, combine the pesto, diced tomatoes, chicken broth, garlic powder, Italian seasoning, salt, and pepper. Stir well.

      Pour the pesto mixture over the chicken breasts in the slow cooker, ensuring they are well coated.

        Cover the slow cooker and cook on low for 4 hours or on high for 2 hours, until the chicken is tender and fully cooked.

          About 30 minutes before serving, remove the chicken breasts and shred them with two forks, then return the shredded chicken to the slow cooker.

            Stir in the penne pasta and cherry tomatoes. Add more chicken broth if needed for desired consistency, then cover and cook for an additional 30 minutes on high or until the pasta is cooked al dente.

              Once the pasta is cooked, stir in the grated Parmesan cheese and mix thoroughly. Adjust seasoning with salt and pepper if necessary.

                Serve immediately, garnished with fresh basil leaves and additional Parmesan cheese if desired.
