12 oz pasta (fusilli or penne works well)

2 cups mixed fresh vegetables (zucchini, bell peppers, cherry tomatoes, carrots)

1 cup fresh basil leaves

⅓ cup walnuts or pine nuts

2 cloves garlic

½ cup extra virgin olive oil

½ cup grated Parmesan cheese (plus extra for serving)

Salt and pepper to taste

Zest of 1 lemon

Juice of 1 lemon

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Pesto: In a food processor, combine the basil leaves, walnuts (or pine nuts), garlic, Parmesan cheese, and lemon zest. Pulse until finely minced.

      Emulsify: While the food processor is running, slowly drizzle in the olive oil until the pesto reaches a smooth consistency. If it’s too thick, add a little reserved pasta water to achieve your desired consistency. Season with salt and pepper to taste.

        Sauté the Vegetables: In a large skillet over medium heat, add a splash of olive oil. Add mixed vegetables and sauté for about 5-7 minutes, or until they start to soften but still maintain some crunch.

          Combine: Add the cooked pasta to the skillet with the sautéed vegetables. Mix in the prepared pesto, adding pasta water as needed to coat everything evenly.

            Finish Off: Stir in the lemon juice for extra brightness and heat everything through for an additional minute.

              Serve: Plate the pasta primavera in bowls, garnishing with additional Parmesan cheese and a sprinkle of fresh basil if desired.
