Ingredients
  

1 large zucchini, thinly sliced lengthwise

1 cup fresh basil pesto

1 cup feta cheese, crumbled

1/2 cup sun-dried tomatoes, chopped

1/4 cup pine nuts, toasted

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    Lay the sliced zucchini flat on a clean kitchen towel and sprinkle lightly with salt. Let sit for 10 minutes to draw out moisture.

      In a medium bowl, mix the crumbled feta cheese, chopped sun-dried tomatoes, toasted pine nuts, and a pinch of black pepper together until well combined.

        Rinse the zucchini slices under cool water to remove excess salt, then pat them dry with a paper towel.

          Spread a thin layer of pesto over each zucchini slice. Place a spoonful of the feta mixture at one end of each slice.

            Carefully roll up the slices, starting from the side with the filling, and secure them using a toothpick if necessary.

              Arrange the rolls in a greased baking dish. Brush them with olive oil and sprinkle a bit more salt and pepper on top.

                Bake in the preheated oven for 20-25 minutes until the zucchini is tender and the tops are slightly golden.

                  Allow the rolls to cool for a few minutes, then transfer to a serving plate. Garnish with fresh basil leaves.
