1 cup creamy peanut butter

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

12 mini chocolate peanut butter cups (unwrapped)

Sea salt (for sprinkling)

Instructions
 

Preheat oven: Begin by preheating your oven to 350°F (175°C) and lining a baking sheet with parchment paper.

    Mix the batter: In a mixing bowl, combine the creamy peanut butter, granulated sugar, egg, vanilla extract, baking soda, and salt. Stir until well blended and a smooth dough forms.

      Shape the cookies: Using a cookie scoop or spoon, scoop out tablespoon-sized portions of the dough and roll them into balls. Place them on the prepared baking sheet, spaced about 2 inches apart.

        Flatten the dough: Gently press down on each cookie ball with the bottom of a glass or your palm to slightly flatten them.

          Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges are lightly golden but the centers are still soft.

            Add the peanut butter cups: Remove the cookies from the oven and immediately press a mini chocolate peanut butter cup into the center of each cookie. The warmth of the cookie will help melt the chocolate slightly.

              Cool and sprinkle: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. While still warm, sprinkle a tiny pinch of sea salt on top of each cookie for an extra flavor boost.
