Ingredients

2 cups crispy rice cereal

1 cup rolled oats

1 cup peanut butter (smooth or chunky)

1/2 cup honey or maple syrup

1/2 cup mini chocolate chips (optional)

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup chopped nuts (almonds, walnuts, or your choice) – optional

Cooking spray or parchment paper for lining

Instructions

Prepare the Pan: Line an 8x8-inch baking pan with parchment paper or spray it with cooking spray for easy removal.

Melt the Mixture: In a medium saucepan over low heat, combine the peanut butter and honey (or maple syrup), stirring until melted and well combined. Add the vanilla extract and salt, and mix thoroughly.

Combine the Dry Ingredients: In a large bowl, mix together the crispy rice cereal, rolled oats, and chopped nuts if using. Stir until well incorporated.

Mix Wet and Dry: Pour the melted peanut butter mixture over the dry ingredients. Stir until everything is evenly coated. If desired, fold in the mini chocolate chips for added sweetness and texture.

Transfer to the Pan: Pour the mixture into the prepared baking pan. Use a spatula or your hands (lightly greased) to press the mixture firmly into an even layer.

Chill: Allow the bars to cool at room temperature for about 30 minutes, then transfer to the refrigerator for 1 hour to set.

Cut and Serve: Once set, remove from the pan and cut into squares or rectangles. Store in an airtight container for up to a week.
