8 oz (225 g) penne pasta

2 tbsp olive oil

3 cups fresh spinach, washed and drained

8 oz (225 g) mushrooms, sliced (button or cremini)

2 cloves garlic, minced

1/2 cup onion, diced

1 cup vegetable broth

1/2 cup heavy cream

1 cup grated Parmesan cheese

1/4 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh basil or parsley for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent (about 2-3 minutes). Add the sliced mushrooms and cook until they begin to brown (about 5-7 minutes). Stir in the minced garlic and cook for an additional minute until fragrant.

      Add Spinach: Gradually add the fresh spinach to the skillet, stirring until wilted (approximately 2-3 minutes).

        Make the Sauce: Pour in the vegetable broth and heavy cream, stirring to combine. Allow the mixture to simmer for 3-5 minutes until slightly thickened.

          Combine Everything: Lower the heat and stir in the cooked penne pasta, grated Parmesan cheese, and red pepper flakes (if using). Season with salt and pepper to taste, stirring until everything is well-coated and creamy.

            Garnish and Serve: Remove the skillet from heat, garnish with fresh basil or parsley, and serve immediately.
