1 pound of medium-sized carrots

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon pepper

1/2 cup grated Parmesan cheese

2 tablespoons chopped fresh parsley (optional, for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Peel the carrots and cut them into thin, fry-shaped strips, about 1/4 inch thick.

      In a large bowl, combine the olive oil, garlic powder, paprika, salt, and pepper. Add the carrot fries to the bowl and toss until they are evenly coated with the mixture.

        Spread the carrot fries in a single layer on the prepared baking sheet. Make sure they are not overcrowded to ensure crispiness.

          Roast in the preheated oven for 15 minutes, then remove from the oven and sprinkle the grated Parmesan cheese evenly over the fries.

            Return the baking sheet to the oven and roast for an additional 10-15 minutes, or until the fries are golden brown and crispy. Keep an eye on them to avoid burning.

              Once done, remove from the oven and let cool slightly. Garnish with fresh parsley if desired and serve immediately with lemon wedges on the side.
