4 boneless, skinless chicken breasts

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

2 large eggs

1 tablespoon Dijon mustard

Salt and pepper to taste

Olive oil spray for roasting

Preheat your oven to 400°F (200°C).

    In a shallow bowl, combine the panko breadcrumbs, grated Parmesan cheese, parsley, thyme, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well to combine.

      In another bowl, whisk together the eggs and Dijon mustard until smooth.

        Pat the chicken breasts dry with paper towels. Lightly season both sides with salt and pepper.

          Dip each chicken breast into the egg mixture, ensuring it’s fully coated. Allow any excess to drip off.

            Immediately transfer the chicken to the breadcrumb mixture, pressing down firmly to ensure the crumbs adhere well to the chicken. Repeat for all chicken breasts.

              Place the coated chicken on a baking sheet lined with parchment paper. Lightly spray the tops with olive oil to enhance browning.

                Bake in the preheated oven for 25–30 minutes or until the chicken is cooked through and the crust is golden brown and crispy.

                  For extra crispiness, you can broil the chicken for the last 2-3 minutes, keeping a close eye to avoid burning.

                    Remove from the oven and let it rest for about 5 minutes before slicing.
