2 filets of sea bass, skin on

4 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons fresh parsley, finely chopped

1 tablespoon lemon juice

Sea salt, to taste

Freshly ground black pepper, to taste

Zest of 1 lemon

Optional: Lemon wedges for serving

Prepare the Sea Bass: Pat the sea bass filets dry with paper towels. This will help achieve a crispy skin. Season both sides generously with sea salt and black pepper.

    Heat the Pan: In a large, heavy-bottomed skillet, heat 2 tablespoons of butter over medium-high heat until it begins to foam.

      Cook the Sea Bass: Place the sea bass filets skin side down in the hot skillet. Press down gently to ensure the skin makes good contact with the pan. Cook for about 4-5 minutes without moving them, allowing the skin to get crispy.

        Flip and Sauté: Once the skin is golden brown and crispy, carefully flip the filets over using a spatula. Add the remaining 2 tablespoons of butter to the pan.

          Add Garlic and Flavor: As the butter melts, quickly add the minced garlic and lemon zest. Spoon the melted garlic butter over the filets as they cook for 2-3 more minutes. The garlic should become fragrant but be careful not to let it burn.

            Finish with Citrus and Herbs: Once the fish is cooked through (the flesh should be opaque and flake easily), remove the skillet from heat. Drizzle the lemon juice over the top and sprinkle with fresh parsley.

              Serve: Plate the sea bass filets, spooning the garlic butter and garlic bits from the pan over the top. Serve with lemon wedges on the side for squeezing over, if desired.
