Ingredients
  

8 oz flat rice noodles

2 tablespoons vegetable oil

3 cloves garlic, minced

1/2 cup firm tofu, diced (or chicken/shrimp)

2 eggs, lightly beaten

1 cup bean sprouts

1/4 cup green onions, chopped

1/4 cup roasted peanuts, crushed

1 lime, cut into wedges

Fresh cilantro, for garnish

For the Pad Thai Sauce:

3 tablespoons tamarind paste

3 tablespoons fish sauce (or soy sauce for a vegetarian option)

2 tablespoons sugar

1 tablespoon chili powder (adjust to taste)

Instructions
 

Prepare the Noodles: Soak the rice noodles in warm water for about 30 minutes or until soften. Drain and set aside.

    Make the Sauce: In a small bowl, combine tamarind paste, fish sauce, sugar, and chili powder. Mix well until sugar is dissolved. Set aside.

      Stir-Fry: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

        Cook the Protein: Add the tofu (or chicken/shrimp) and cook until browned on all sides. Push to the side of the pan.

          Add Eggs: Pour the beaten eggs into the pan, stirring quickly to scramble. Once cooked, mix with the tofu.

            Toss in Noodles: Add the soaked rice noodles to the skillet along with the prepared sauce. Stir-fry for about 3-4 minutes, ensuring the noodles are well coated and heated through.

              Finish with Veggies: Add the bean sprouts and green onions, stirring gently to combine. Cook for another minute.

                Serve: Plate the Pad Thai and top with crushed peanuts, a squeeze of lime, and fresh cilantro. Enjoy hot!
