Ingredients
  

1 cup orzo pasta

2 cups vegetable broth

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 cup heavy cream (or coconut cream for a lighter option)

1/2 cup grated Parmesan cheese

Zest of 1 lemon

Juice of 1 lemon

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

In a medium pot, bring the vegetable broth to a boil over medium heat. Add the orzo pasta and cook until al dente (about 8-10 minutes). Drain and set aside, reserving 1/2 cup of the broth.

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent (about 3-4 minutes).

      Stir in the minced garlic and cook for another minute, being careful not to burn it.

        Add the halved cherry tomatoes and cook until they start to soften (about 3-5 minutes).

          Pour in the heavy cream and reserved vegetable broth, stirring to combine. Allow the mixture to simmer for a few minutes until it thickens slightly.

            Mix in the cooked orzo, spinach, lemon zest, and lemon juice. Stir until the spinach wilts and everything is well coated.

              Fold in the grated Parmesan cheese and season with salt and pepper to taste. Remove from heat.

                Serve warm, garnished with fresh basil leaves for an aromatic finish.
