Instructions
Prepare the Base: In a medium bowl, combine the crushed Oreo cookies and melted butter. Mix until the crumbs are evenly coated.
Form the Crust: Press the Oreo mixture into the bottom of a 9x9 inch baking dish evenly, creating a compact layer. Use the back of a measuring cup to press it down firmly. Set aside.
Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
Add Sweetness: Gradually add the powdered sugar and vanilla extract, mixing until well combined.
Whip the Cream: In a separate bowl, whip the heavy whipping cream until stiff peaks form.
Combine: Gently fold the whipped cream into the cream cheese mixture. Then, fold in the mini chocolate chips for added crunch.
Spread the Filling: Pour the cheesecake filling over the Oreo crust in the baking dish and smooth the top with a spatula.
Chill: Refrigerate the cheesecake bars for at least 4 hours or until set.
Finish and Serve: Before serving, crumble the remaining 2 Oreo cookies on top for garnish. Slice into squares and serve chilled.
